The Holiday Bikini – A Recipe

We present a home-style version of a beverage featured on the seasonal menu. This is a batch pre-mixed that is packed with essence associated with holiday season, which makes it ideal for hosting a holiday party. Reserve the remaining syrup you can use for breakfast cocktails, desserts, or to make another batch of the drink.

Bikini Recipe

Yields 10 servings

To make the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Premix (produces 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Method

For the Syrup: Combine the listed ingredients into a pot, bring to a simmer, mixing to dissolve. Next, remove from the stove and leave to cool down completely. Pour to a sterilised bottle, seal and store chilled, it can be stored for up to a month.

For the Batch Mix: Combine all the liquids into one big jug, allow it to infuse for 60 minutes, then strain best through muslin, to ensure it's completely strained.

To serve: Measure 85ml from the cocktail base into a stirring glass containing ice, and agitate gently for a minute until cold. Strain to a chilled martini glass or a similar vessel, garnish with a few cranberries and complete it with a brief mist of mandarin oil over the top.
